If you look at what you eat and reign in your macros, that does not mean that you are stuck with threadbare food. Cake can be a part of your life, even if it is torn.
And YOU want to continue THIS cake. Each piece is damn big and with 9 grams of protein, 6 carbohydrates and just 1 gram of fat you can probably bring a few pieces into your day.
The combination of apple sauce and pumpkin puree gives it a butter cake texture, and each piece pops with a ton of cinnamon and cream cheese flavor. They want a second piece, and since it's only 80 calories, beat out.
- 1 cup Bob's Red Mill low-carbohydrate baking mix
- 1/2 teaspoon baking powder
- 1/4 teaspoon sea salt
- 1/2 cup Splenda (19659006) the kind that is used for baking and can replace the sugar cups for mugs)
- 1 cup vanilla Metabolic Drive® Protein
- 4 teaspoons cinnamon
- 4 egg whites
- 1/2 cup apple sauce
- 1 cup Pumpkin puree
- 1 cup non-fat cream cheese
- 1/3 cup Walden Farms pancake syrup
- 1/3 cup vanilla Metabolic Drive® protein
- 1/3 cup crushed walnuts (optional)
- Preheat the oven to 350 degrees Fahrenheit and spray a 9×9 baking pan with cooking spray.
- Mix your dry ingredients in a medium bowl – baking mix, baking soda, baking soda, splenda, salt, cinnamon and protein powder
- Mix your egg whites, pumpkin puree and apple sauce in a separate large bowl and pour into your dry mix , Stir it together, but do not mix it.
- Pour it into your casserole dish and bake for 20-25 minutes, depending on the oven. Put a toothpick in it and when it comes out clean, it's done. Set it aside and let it cool.
- Soften the cream cheese in a smaller microwave-proof bowl. Add syrup and protein powder and stir well. Add walnuts if you want. Distribute it evenly on your (cooled) cake and cut it into 12 pieces.
