Everyone knows that ice cream is the best summer party. It's cold, refreshing and … it melts super fast? Here's the thing: if you eat ice cream in the winter, it takes much longer. The problem is, ice cream does not feel like a winter dessert, you know?
These peppermint ice cream sandwiches convinced us that we were wrong. Between two toasted waffles dipped in melted chocolate, the frozen yogurt with peppermint (you can also use peppermint ice cream) tastes incredible.
Do not trust us? Whip up a few and see for yourself. Something about this combination of chocolate and peppermint, we swear.

peppermint ice cream sandwiches

Preparation: 4 servings
Ready in: 40 minutes
INGREDIENTS  4 toaster waffles
1 pint of peppermint , frozen yoghurt or ice cream
1/2-pack chocolate chips
1. Roast waffles, let cool (so that the ice does not melt!).
. 2 Put a few spoons of frozen yogurt on a waffle. It should be enough to cover most of the surface.
. 3 Put another waffle on yogurt or ice cream. Press firmly down to keep the sandwich together, but be careful not to break the waffle.
. 4 Freeze sandwiches for at least 10 minutes.
. 5 Meanwhile, melt the chocolate chips in the microwave and crush the peppermint sticks in a plastic bag with a rolling pin or your hand. They should be small chunks, not dusty crumbs. Put in a bowl or a plate.
. 6 Take sandwiches out of the freezer and cut them into quarters. Dip each quarter in the melted chocolate and roll in the peppermint garnish. Freeze until served.
