Ross: I missed carbohydrates. I really missed carbohydrates. But as soon as I had it, I immediately felt bloated.

MH: So what are the main takeaways for meat versus vegetables?

Ross: Mine The cholesterol remained the same – about 6.5, quite high – and Hugo [on the vegan diet] dropped to 4.9.

Hugo: I was around 5.9 in the beginning, so it dropped dramatically.

Ross: Just like your libido.

Hugo: Yes, my libido went out the window. But my energy levels [were better]. I didn't get that drop of sugar. I couldn't have most snacks – chocolate, cookies, sweets. I was pretty much just concerned with nuts and fruits.

Ross: We had Mindful Chef who delivered our food, so we had exactly the same calories – give or take 50 calories a day.

MH: How did veganization affect your training?

Hugo: My energy levels in the gym were much, much better. We went to the gym five or six times a week and I didn't have a session where I thought, "I really don't have any energy."

Ross: I was the opposite. I was very hungry at 10 or 11 a.m. I had these big energy peaks and then I crashed. But then the results [of our training] were very different – I gained weight and Hugo lost it.

Hugo: I shredded. I lost 4 kg of fat in the first two or three weeks.

Ross: We were wearing continuous glucose monitors: they are on the back of your tricep and connect to your phone. I tipped, went down, had this sugar low – or meat low – and Hugo was much happier.

MH: What type of training did you do?

Hugo: It is consistently oriented, i.e. with high repetitions and low weight, instead of trying to build mass. We do not want to carry any additional weight on our expeditions.

Ross: We use a submaximal test to measure how fit we are when you reach a certain heart rate with a Wattbike. It's simple but very effective if you want to find out how fit you are.

MH: And less uncomfortable than a VO2 maximum.

Ross: I don't. Note the VO2 max. It's a lot of fun. An effective way, as we [to track] found our endurance training, is to count the "total" raised mass. We went from about three tons – which sounds epic – to 10 or 11 tons in an hour. When you add up the weight, it becomes really motivating.

MH: "How much do you put on the bench?" "A ton …"
