Banana apple almond butter baked oatmeal squares
- 4 cups roll ed oat
- 2 1/3 cup almond milk (or other preferred milk)  1/4 cup + 2 tablespoons creamy, greasy almond butter
- 1/4 cup + 2 tablespoons honey
- 2 ripe bananas, mashed
- 1 large apple that bakes well, like Pink Lady
- 1 Teaspoon cinnamon, plus more to sprinkle
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Preheat oven to 375 ° F. Spread a 13×9 casserole dish with cooking spray.
Peel and dice the apple. Crush bananas. Set both aside.
Combine almond butter, honey and vanilla extract over low heat in a small saucepan. Cook until the mixture is warm, combine well and start to bubble and stir a few times.
Meanwhile, mix oats, cinnamon, salt and baking soda in a mixing bowl.
When the almond butter mixture is ready, pour it into the mixing bowl on top of the oat. Add the milk and the mashed banana. Stir everything with a wooden spoon until well blended.
Cut the apple into cubes and stir again.
Add the mixture to the baking dish. Optional: Sprinkle some cinnamon over it
Bake for 25 to 30 minutes until it feels firm.
Allow to cool slightly before cutting into 10 squares.
