Ingredients

  • 4 cups roll ed oat
  • 2 1/3 cup almond milk (or other preferred milk) [19659010] 1/4 cup + 2 tablespoons creamy, greasy almond butter
  • 1/4 cup + 2 tablespoons honey
  • 2 ripe bananas, mashed
  • 1 large apple that bakes well, like Pink Lady
  • 1 Teaspoon cinnamon, plus more to sprinkle
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Directions

  1. Preheat oven to 375 ° F. Spread a 13×9 casserole dish with cooking spray.

  2. Peel and dice the apple. Crush bananas. Set both aside.

  3. Combine almond butter, honey and vanilla extract over low heat in a small saucepan. Cook until the mixture is warm, combine well and start to bubble and stir a few times.

  4. Meanwhile, mix oats, cinnamon, salt and baking soda in a mixing bowl.

  5. When the almond butter mixture is ready, pour it into the mixing bowl on top of the oat. Add the milk and the mashed banana. Stir everything with a wooden spoon until well blended.

  6. Cut the apple into cubes and stir again.
