I often bring home food from restaurants. Is it okay to leave food in takeaway containers?
Answer by Katherine Zeratsky, R.D., L.D.
It is probably safe to leave food in take-away containers. The key is to keep food in a flat container that can be closed when it cools down. These practices protect against bacteria.
Another safety tip: Do not leave prepared food in the car or on the counter for more than two hours. If you are in a hot location (above 32 ° C), reduce this time to one hour. In uncooled foods, bacteria can grow quickly. And some bacteria produce a poison or poison that can make you sick, hence the term "food poisoning".
If you do not intend to eat right away, you have two options. You can keep it warm in a preheated oven at an internal temperature of 60 ° C or higher. Or you can divide food into smaller portions, place in shallow containers and refrigerate. Preheat the food to a temperature of 74 ° C just before serving.
