Add the cauliflower to a saucepan and cover with chicken broth. Simmer until the cauliflower is very soft. Let it cool. Add the mixture to a blender and mix until thick and smooth. If necessary, season to taste and add salt and pepper. Put aside. Fry the carrots, celery, onions and mushrooms in olive oil. Add salt and pepper and cook until tender. Add sherry and spinach and cook until they are withered. Add the chicken broth, cauliflower mixture, milk, chicken and rice. Heat and serve.
Ham Pot Pie (5 large portions)
