Healthy cold weather comfort food



Everyone loves comfort food, especially when it's cold outside! As I am always trying to make my prescriptions healthier, I have found a way to make these two recipes taste really delicious and comforting, without all the guilt that you feel after eating … let alone having to take a nap ! These recipes are also a great way to sneak more vegetables into your diet. Nobody will ever know that they eat something healthy! I hope you enjoy these recipes and share them with your friends.

Chicken Soup

  • 1 medium headed cauliflower blossom
  • 4 cups chicken broth
  • 1 cup diced carrot
  • 1 cup diced celery
  • 1 diced onion
  • 1 boiled onion mushrooms
  • 2 tb Sherry
  • 2-3 cups of fresh spinach
  • 2 tsp olive oil for frying
  • Salt and pepper to taste1 (12 oz) can be boiled steamed low-fat milk
  • 2 C wild boiled rice
  • 2-3 cups cooked Chicken
  • Add the cauliflower to a saucepan and cover with chicken broth. Simmer until the cauliflower is very soft. Let it cool. Add the mixture to a blender and mix until thick and smooth. If necessary, season to taste and add salt and pepper. Put aside. Fry the carrots, celery, onions and mushrooms in olive oil. Add salt and pepper and cook until tender. Add sherry and spinach and cook until they are withered. Add the chicken broth, cauliflower mixture, milk, chicken and rice. Heat and serve.

    Ham Pot Pie (5 large portions)

  • 1 medium head cauliflower flowers
  • 1 low sodium box or no salt broth (4 cups)
  • 1/2 C grated Parmesan cheese (or more) to taste) [19659004] 1/4 teaspoon nutmeg
  • 1 LB ham cubes
  • 1 pkg of frozen vegetables (lightly cooked in a bag and on instructions)
  • 1 pkg of frozen pearl onions (cooked lightly on instructions)
  • Lite Jarlsberg, Cheddar or Swiss cheese (5 slices)
  • 2 slices of 100% wholegrain bread (made into fresh bread crumbs)
  • salt and pepper
  • 1 tb dried parsley
  • 2 tsp olive oil or melted butter
  • Cauliflower and chicken broth in Pour a pot and simmer covered until the cauliflower is really tender. Let it cool. After it has cooled, put in a blender and add Parmesan, nutmeg and pepper. Mix until very smooth. Put aside. In the meantime, add the oil or melted butter, salt, pepper and parsley, stirring until the oil has covered all the bread. Put aside.

    Mix the ham, onions and vegetables and place in 5 separate bowls. Add the ladle and even the cauliflower sauce to each bowl at the top of the ham mix and stir. Top with a slice of cheese and then the breadcrumbs. Bake at 350 until bubbly and browned. If the breadcrumbs turn brown before they're done, just drape a piece of foil over them.
