Healthy Cabbage Caesar Salad Recipe with pomegranate and pumpkin seeds

Kale-pomegranate-chicken-caesar salad with pumpkin seeds

Ingredients

  • 4 cups organic Tuscan kale, thinly sliced ​​
  • 2 tablespoons raw pumpkin seeds
  • 1
    /2 cup pomegranate arils
  • 8 oz. Organic rotisserie chicken, chopped
  • 1/4 cup vegan caesar dressing (recipe below)
  • Parma! Vegan parmesan garlicky green
  • Himalayan salt and ground black pepper to taste

For vegan caesar dressing:

  • 1/4 cup lemon juice
  • 1/4 cup tahini paste
  • 2 tablespoons of cider Vinegar
  • 1/4 cup + 2 tablespoons extra virgin olive oil
  • 3/4 cup purified water
  • 1/4 cup nutrient yeast
  • 1 tablespoon Annies organic horseradish mustard
  • 1 teaspoon coconut-aminos
  • 1/2 teaspoon of lemon zest, bred
  • 1 clove of garlic
  • Himalayan salt and ground black pepper to taste

Preparation

  1. Preparation of a vegan Caesar dressing: Add Vitamix or other high ingredients – Stirrer and mix until emulsified. Add salt and pepper to taste. Put aside.
  2. In a large salad bowl, throw kale, pumpkin seeds, pomegranate arils and chicken with 1/4 cup vegan Caesar dressing.
