15 ounce can of pinto beans, drained and rinsed
Peppers, gutted and chopped
Corn kernels, either fresh or frozen and thawed
- In a large bowl combine beans, paprika, corn, salt and pepper.
- Season fresh lime juice and stir in olive oil.
- Leave the mixture in the fridge for 30 minutes.
- Add avocado just before serving.
The prices of avocados can vary greatly depending on availability. And while avocado can really add flavor and satiety to your salad, for an equally delicious salad, add a cup of cooked and chopped sweet potatoes with 1 to 2 tablespoons of sunflower seeds.
